Aussie Victory in Las Vegas
There's no doubting the outstanding culinary abilities of one of Australia's great pizza makers, Theo Kalogeracos of Little Caesars Pizzeria in Perth.
As far back as 2000 he was a finalist in Dairy Farmers Best of the Best Pizza Challenge - a feat he repeated in 2001, 2002 and was crowned Winner in 2003.
In 2004 he first appeared on the world stage as a member of Dairy Farmers Australian Pizza Team in New York.
Now, on March 16, 2006, he's won - yes won - the amazing Italian Chef Wars™ in Las Vegas with every one of the three dishes on his winning menu being pizza.
Pizza for entrees! Pizza for mains! Pizza for dessert!
What makes his victory even more remarkable is that during the heats he competed solo against international teams of up to five people each.
These are the descriptions of his winning creations from his restaurant menu.
1. Jane's Addiction - Mozzarella cheese, prawns marinated in wild rocket pesto, prosciutto, lemon juice, garlic cream sauce.
2. Chicken Fettucine - Sundried tomatoes, fettucini pasta, cream sauce, parmesan cheese, mozzarella cheese, chicken, bacon.
3. Tea Party - French cinnamon sponge cake mix, caramelized pear and apples, maple syrup.
The Italian Chef Wars™ are part of the International Pizza Expo, which was held in Las Vegas between March 14-16.

Finalists in the Italian Chef Wars™ came from USA, Canada, Italy and Australia. Armed with the same ingredients at their disposal and a strictly limited time, these super talents had to prepare:
